Foot-trodden until spontaneous fermentation begins, for progressive release of the must. 45 days of very gentle maceration (infusion) with skins and stems, for delicate extraction. Aged in demi-muid Used in a 600-liter vat, and aged for the last month in a concrete tank. Natural clarification and stabilization during aging. Bottled unfiltered.

Limited and numbered production of 800 bottles

CataRuby in color with a certain transparency. On the nose, it evokes the freshness of mountain red fruits (wild strawberries, red currants), floral notes, and a slightly spicy background. On the palate, it is agile and elegant, with fine tannins, lively acidity, and a clean, expressive, fresh, and mineral finish.
